Can you replace the tightening knobs with RAM Pin-Lock Security Knobs?

Yes, you can replace the knobs on this arm with RAP-S-KNOB3U
Looks like it's not a real 360degree adjustment! Only a few positions can be locked in?

The two sockets of the RAP-B-200-12U can rotate 360 degrees independently of one another on the center axis then will be locked in place once you tighten the corresponding tightening knobs.
When the Socket ends are tightened, does the Swivel also get locked?

Yes, when the sockets are tightened the arm can not swivel.
